PATAGONIAN WILD JUNIPER
Local collectors harvest the juniper by hand from wild plants (not plantations) of the cordilleran area (El Bolsón, Lago Pueblo, etc.)
COLD MACERATED
We chose cold maceration as a technique for the extraction of aromatic substances from botanicals, looking for subtlety in said extraction. This maceration is kept for 48hs.
WE USE THE HEART OF THE DISTILLATE
We start with a triple distilled corn alcohol, which we distill again to obtain a gin with alcohol of four distillations. We use only the heart of the distillate, discarding good parts of the head and tail.
