Crafted from a blend of 60% Pinot Noir and 40% Chardonnay grapes, sourced from vineyards in Luján de Cuyo, Argentina. The Pinot Noir grapes are harvested in Perdriel during the second and third weeks of February, while the Chardonnay grapes are harvested in the first week of February. The winemaking process involves extracting the must using pneumatic press in a single pressing process. The clear must is then cooled to 2ºC for 24 hours to settle impurities, followed by inoculation with selected yeasts. The Pinot Noir ferments in stainless steel tanks and new French oak barrels to enhance nutty aromas, while the alcoholic fermentation occurs between 14ºC and 16ºC in stainless steel tanks. The wine base rests on lees for 12 months, resulting in a refined and well-balanced sparkling wine.
