How To Make Chipa?

Known in Latin America as chipá or chipa, it is a bread made with cassava starch, eggs and a lot of cheese, traditional from Paraguay, Argentina, Uruguay and Brazil, but its recipe is ancestral.

Its origin comes from the Guarani culture, from the evolution of a bread that the Guarani indians made by grating raw cassava, called mbujape.

Why is it called “chipa"?
The cassava starch becomes sticky when heated, generating a consistency that is called chipa in Quechua, which also means caked.

The United Nations Educational, Scientific and Cultural Organization (UNESCO) considers chipa as a shared heritage among Argentina, Paraguay, Uruguay and Brazil.

Nowadays, there are more than 70 recipes to make chipa, and many more versions.
Here you have below 5 varieties that surely, you did not know:

Chipa so'o: It is a larger traditional chipa, stuffed with meat and egg. Its name is due to the fact that "so'o" means meat in Guarani.
Chipa Manduvi: "Manduvi" means peanut in Guarani, so the mixture is made with corn flour and ground peanuts.
Chipa 4 cheeses: 4 varieties of cheese are used to fill the chipa.
Quezu Chipa: This chipa is made with fresh cheese, preferably goat cheese.
Chipa Caburé: Long and with a fine texture, it is cooked over hot coals, making it crispier and not fluffy inside, due to its cooking method.

How to prepare the classic chipa?
The easiest way is using a premix. They are very rich and it is super easy and quick to make.

Ingredients to make chipa

  • 400 grams of Chip premix
  • 120 cm3 water
  • 3 eggs, beaten
  • 150 grams grated hard cheese
  • 150 grams grated pategrass cheese (or choose the cheese you like the most)
  • 1 tablespoon olive oil

How to make chipa? Step by step
1. Preheat the oven to 180 for 15 minutes
2. Mix everything
3. Knead until the ingredients are unified
4. Make balls of the size you prefer, now that you know more varieties you can fill them.
5. Put them in the oven for about 20 minutes

They're ready to eat now!
