What are pastelitos?
The traditional pastelitos criollos are a type of sweet cake from the cuisine of Argentina, Paraguay and Uruguay, made with a crispy and puff pastry dough. Usually filled with quince jelly, dulce de leche, sweet potato jelly or guava jelly.
In Argentina, creole pastelitos are associated with May 25, 1810. It is said that when Argentina formed its first national government, during that autumn of 1810, some ladies of the time carried baskets full of cupcakes on their heads to celebrate this event.
Today they are already part of the popular culture of the country and on every motherland date all bakeries prepare them.
How to make super easy Creole Cupcakes Pastelitos?
Pastelitos Recipe
Ingredients:
- Pastelitos dough squares, preferably puff pastry (2 squares per cupcake).
- Sweet potato, quince or dulce de leche for the filling (approx 1 kg for 16 total discs).
- Sugar (2-3 tbsp approx).
- Water (2-3 tbsp approx).
Steps:
- Place a cube of jelly in the center of each dough disc.
- Brush with water around the jelly.
- Cover with another dough disc or square discs with the tips overlapping.
- Pinch the dough from below, pressing on the edges to close the cupcakes.
- Fry with plenty of hot oil or fat until golden brown.
- Check and remove from heat.
- If desired, pass through syrup or sprinkle with powdered sugar.
